This is deep fried Pig\'s Head but was boiled first to make it flavorful and spiced with dry rubs before frying. And here are the ingredients: Pig\'s Head (cut in half) Cooking Oil for frying For the boiling: Garlic - 1 head or about 8 cloves Red Onion - 1 large Dried Bay Leaves - 5-6 pieces Whole Black Pepper Corns - 1-2 tbsp. Salt - 4 tbsp. Water - 3 to 4 liters or until the pig head is submerged For the rub (pre-frying): Garlic Powder - 3-4 tbsp. Iodized Salt - 2-3 tbsp. Ground Black Pepper - 1-2 tbsp. Vinegar - 2 tbsp. For the dipping sauce: Vinegar - 1 cup Soy Sauce - 5 tbsp. Salt - 1 tsp. Black Ground Pepper - 1/2 tsp. Labuyo / Thai Chilis - 3 pcs. Garlic - 4 cloves Red Onion - 1 small White Sugar - 4 tbsp.
